Kibbeh and Its Siblings!
Have you ever thought about the origin of the food you are eating? Were you interested before, to know the story behind the plate you taste? Well, it's the same as having siblings in life, all coming from the same origin, the main plate or ingredients, but with different ways of doing it according to every character and culture around. Siblings are biologically connected but are unique in their own way. The same is our Kibbeh. All of our plates fall under the category of Kibbeh, but each has a certain twist that helps create an identity different from the others.
What makes Kibbeh so special? It is the fact that it has more than one different recipe like Kibbeh nayyeh, fried Kibbeh, grilled Kibbeh, Kibbeh with yogurt and garlic, Armenian Kibbeh and a lot more.
The twist of each kind of Kibbeh varies between the recipe and the taste.
The most chosen or ordered by Lebanese and Arabs is Kibbeh nayyeh (Lebanese expression). It is made of raw meat and borghol (grains) which makes it is a traditional Lebanese mezza a lot of people crave, I certainly do not like...
Some classical kinds of Kibbeh are fried Kibbeh and grilled Kibbeh. Most of the people cook them at home for their simplicity. They are made of meat and grains from the outside; onions and meat from the inside. They have an oval shape, either fried or grilled. What a crunchy taste!! Some people add to it pine nuts or walnuts. These are the traditional Kibbeh most people like but my favorite is the fried!
In addition, there is Kibbeh with yogurt and garlic. It is the classic oval shapes Kibbeh cooked with yogurt and garlic and served in a tray! It is so mouth watering! Most Lebanese call it “Labniyyeh”.
And one of the special kinds of Kibbeh is the Armenian Kibbeh. It comes in two ways: first it is the traditional Kibbeh filled with cherry jam instead of meat which gives it the sweet taste. Second there is the Kibbeh filled with meat and pomegranate that symbolizes Armenians, which gives it a bit of a sour taste. These are a must try!
